Snapshots

After so many years in this field, I am certain of one thing: growth through change requires solid foundations. I find those foundations in the people I like to call the pillars of my work. I have shared many books with those who form the backbone of D’O: Alessandro Procopio, Manuele Pirovano, Davide Novati, Wladimiro Nava, Alessandro Ghezzi, Francesco Venegoni, Walter Oldani, Silvia Giribaldi, Evelina Rolandi, Luisa Crespi, Davide Grieco, Claudio Onorati and these pages reflect how we have stayed true to ourselves through change, and something of a celebration. I think back to how we began, over twenty years ago, talking about the philosophy of Cucina POP – a democratic vision of fine dining – and how it has evolved to now represent our bread and butter: something that continues to keep us alive, curious, and full of enthusiasm. I also want to celebrate over twenty years of D’O with this book in which I share a part of my journey – our journey. I cannot say whether it is in any way remarkable, but it is certain­ly one I hope to pass on to younger genera­tions: they always have something to teach me, and I would like in return to give back a little of the trust I place in them.

For me passion is the thread that runs through everything, the way I approach life. It’s what makes me say every single day “I wanted what I now have” and “I still want it”. This volume celebrates over twenty years of D’O, and chef Davide Oldani takes the opportunity of this milestone to reflect on a journey shaped by determination, taken one step at a time and alongside the many people who have accompanied him along the way. It is the story of a collective effort, driven by teamwork and a constant desire to innovate, experiment and dream.
